INGREDIENTS
250gms of Pumpkin cubes
1 Tbs of basil date spread whisked with lemon juice
200gms Feta cheese cubes
1 tablespoon black sesame seeds
1 cucumber - thinly sliced
1 carrot - thinly sliced
1 lemon - juiced
2 cups of Lettuce gently torn
Salt to taste
Black pepper powder to taste
PROCEDURE
Add pumpkin cubes, basil date spread, black pepper powder and salt in the oven tray. Mix all ingredients well.
Place the tray in a 15-minute pre-heated oven at 180-Degree Celsius for 30 minutes, until the pumpkin cubes golden brown colour.
Let the Pumpkin cubes rest for 30 minutes so they cool down and mix the salad with the rest of the ingredients. Add Salt and pepper to taste and black sesame seeds to garnish. Add a dash of soy sauce for extra flavour.
